Types of entremets and tortes: Exploring different types of entremets and tortes, such as mousse cakes, mirror glaze cakes, dacquoise, and opera cake. 

Preparing the cake layers and fillings: Demonstrating how to properly prepare the cake layers, mousses, creams, and other fillings used in entremets and tortes. 

Assembling and layering: Understanding the techniques involved in assembling and layering the cake, including the use of acetate strips, moulds, and freezing. 

Glazing and decoration: Learning how to properly glaze and decorate the cake, including the use of mirror glaze, chocolate decorations, and edible garnishes. 

Torte techniques: Understanding the techniques involved in making tortes, such as flourless chocolate torte, Linzer torte, and Sacher torte.
